Raise your hand if you need to eat more dark leafy greens . . . Right, that’s what I thought!
I’m a huge fan of smoothies because you can pack all sorts of green leafy vegetables in them. The trouble is, the way most people make smoothies, they are more fruit than vegetable.
The Green Giant is different. It is all vegetable! Okay, there’s an avocado in there, and technically, that’s is a fruit. It’s green though, so let’s roll with it.
This recipe makes about 32 ounces of smoothie (packed with 11 grams of protein and four servings of vegetables). You might think it’s loaded with calories thanks to that avocado, but it’s not. The whole thing is a lean 300 calories – perfect for breakfast! Or split it with a friend for a healthy green snack.
Green Giant Smoothie
2 cups cold water
2 huge handfuls of baby kale, about 3 cups
1 celery stick
1/2 English cucumber
1/2 medium avocado
3 tbsp lemon juice
1/2 piece of fresh ginger, peeled
Put the water and kale in a high powered blender and blend until the kale has broken down and isn’t taking up so much space in the blender. Add the remaining ingredients and blend the heck out of it. (On my Blendtec, I used the “whole juice” setting.)
